A Sweeter Lasagna

Next time you make lasagna, whatever your favorite recipe is, add one thing: slabs of sweet potato. You’re layering noodles, cheese, maybe veggies, maybe ricotta/yogurt/mozzarella… just add one more layer, some leftover baked sweet potato, sliced into long slabs as thick or thin as you like. Bury them inside the lasagna, rather than on the top, as sweet potato burns easily when exposed to direct heat.

It will add mouthfeel, sweetness, color, and the fabulous fiber, vitamins, and potassium of sweet potatoes.
