Our sweet potato salsas make such quick and easy meals. One of my favorites is a rice bowl (a/k/a burrito bowl, buddha bowl, quinoa bowl). I start with my favorite bowl.
Add hot rice. I like brown rice because of the chewy, nutty texture. Quinoa also works, or millet. What’s your favorite?
Then ~ and here’s the fun part ~ you get to add whatever flavor ingredients you want.
The first one is the Sweet Potato Salsa, and any of our 3 flavors will do great (Tuscan, Moroccan, Mexican). Today I felt like Mexican, so a nice, thick stripe right down the middle. That’s the flavor base, and the main vegetable.
Honestly, if that’s all you have time for, you’re good. It’s a meal already.
And if you add a little cheese, or tofu, or chicken, or even more beans (there’s already black beans in the salsa), leftover ground beef or steak, you add even more protein.
When I’m at home I add more veggies if I have time. I’m pretty intuitive about this. So for example, today, since the rice is chewy, and the salsa is velvety, I added orange peppers for color and crunch. And green parsley and red romaine to add some greens in there. That’s just what I had. If you have leftover asparagus, or kale, or cabbage, or sugarsnap/snow peas, or Brussels sprouts, or cauliflower, any of it would be good.
Then because there were these gorgeous sunflower sprouts at the coop, I sprinkled them everywhere. There’s so much nutrition in sprouts, I buy them whenever there’s a great local source of fresh ones. I used to grow them, way back in the BC era (Before Children), but who on earth has time for that now?
This whole bowl took about 5 minutes to put together, because I had hot rice. If you’re using cold leftover rice, microwave the rice and salsa, then add the veggies after.
Add a little cheese if that’s your thing, don’t if it’s not. If not cheese, then avocado is a great addition ~ you want a little nutritious fat with this meal so your body gets all the nutrition out of it. The beta carotene that’s in our salsas in huge amounts, gets absorbed by your body with a little fat to help it.
There you go. Simple, beautiful, easy, nutritious, and most of all, delicious!
